There is a multitude of ways to cook this cut ,one that we like to do is to reverse sear it on the BBQ...
Get your steak,season it well then put it on a roasting tray in a med oven for approx 30mins ,remove and grill on your BBQ until its cooked to your liking (+63c is rare--- +75c for well done)Remove from heat and let rest in a warm area for approx 10 mins before serving
