Centre cut Fillet perfect for making a Wellington Roast or just cutting into steaks.
to roast this bit of beef rare/medium
leave out of fridge for approx 30mins before cooking
season with salt and pepper(lea perrins is good too)then put into a preheated med/hot oven (200c Mk5) on an oiled tray for approx 30-35mins (+63c)
Remove from oven and cover with foil and let rest in a warm area for 10-15minutes before serving
